Lemon & Worcestershire roasted Nuts…

…Plus, my first ever award nomination. “Award nomination” - It feels good just saying it.

I know, you’re asking yourself: But, Graeme, if I vote for you, what will you do differently?

Good question, Citizen. Let me put your mind at ease; With a vote for Blood Sugar, you’ll not only be helping in the fight against bad photography and on-camera flash - You’ll also be bringing hope to the children of subsequent generations of food Photographers. Trust in me - A vote for Blood Sugar, is a vote for victory!

I very nearly messed this entire thing up before I’d even started - “Worcestershire sauce”, is hardly ever referred to as such in the UK, but rather ‘Lea & Perrins’; The one found in every supermarkets and corner shop across the Country.

I say that I nearly messed it up, when I dropped the bottle getting it from bag to cupboard. You know the feeling, you can see it going, it’s going, falling! Noooo! Fortunately, it bounced on it’s lid, and with my Cheetah-like reflexes, I caught it on the rebound.

True story.

Lemon & Worcestershire-roasted Nuts:

Mixed nuts, 200g • Zest of 1 Lemon • A few splashes of Worcestershire sauce. I didn’t measure, just enough to coat • Salt & Pepper (optional).

1. Pre-heat your oven to 160˚c. In a bowl, coat the nuts with the Worcestershire sauce & lemon zest.

2. Pour the nuts in an even layer, onto a baking sheet, and place in the oven for 20 minutes or so, turning occasionally.

3. Remove from the oven and leave to cool.

4. At this point, the nuts will still be quite messy and a little sticky. Over a medium heat, warm a dry frying pan and add the nuts.

5. Keep the nuts moving, turning and tossing, until dark in colour, and all the sticky liquid has gone. Season, then transfer to a paper bag - Because nuts are always better from a paper bag.

  1. Ooh, that’s a very appealing bronze sheen on (the) nuts. Is Worcestershire sauce in Worcestershire just called sauce, then?

    Way ahead of you in voting. But did I vote for you?!?! Dun dun dunnn…. The answer might surprise you! Not.

    I was going to poke corny fun at the “turning occasionally” instruction but you’d be all over my ass with your mean-ness, so I thought I’d leave it alone :-p

    It was so difficult writing this post, for obvious reasons - Toss your nuts; Spread your nuts out, etc.

    The book is ’simply bill’ by, believe it or not, Bill Granger. He’s so laid back, he spells his name without capitals.

  8. I wasn’t so lucky with the jar I keep my brown sugar in, Graeme - yesterday, the thing flew to the ground and it was a mess. :(

  14. Finally managed to do these, loving it, thank you so much for inspiration. I really, really enjoy your blog. It’s got personality. I guess that means you’ve got as well ;-) And of course, gave you the credits for the recipe in my blog.
